These breakfast cookies pack a powerful nutrition punch. They have calcium (from the DariFree™ and calcium powder), protein (from the egg, pecans, and bean flour), iron (from raisins), and essential fatty acids (from the flax powder). 

They are not terribly sweet and are easily modified for yeast-free regimens. I like this recipe so much that we featured it in The ANDI News and in The Autism-Asperger’s Digest Magazine. Do not be put off by the long list of ingredients, they are easy to make. I have modified it slightly from the original version.

Ingredients:

Liquid Ingredients

1 stick CF margarine, softened

1⁄3 cup pure maple syrup or honey

1 egg

½ cup orange juice

1½ teaspoons vanilla extract

Dry Ingredients

1 cup GF flour blend

(I like Hagman’s Four Flour Bean Mix)

1 cup GF oats or thinly sliced poha

1⁄3 cup dry DariFree™

1⁄3 cup rice bran

1 tablespoon calcium powder (available from Kirkman Laboratories)

1 tablespoon Nutriflax powder (available at health food stores)

1½ teaspoons xanthan gum

1 teaspoon GF baking powder

1 teaspoon salt

1 cup raisins (or other dried fruit)

1⁄3 cup pecans, ground (or other nuts, if tolerated)

¼ cup unsweetened coconut flakes (no sulfites)

Directions:

1) Preheat oven to 350ºF.

2) Spray 2 cookie sheets with cooking spray.

3) Cream together margarine and maple syrup in a large bowl. Beat in egg. Add juice and vanilla.

4) Add dry ingredients except for raisins, nuts, and coconut. Mix well.

5) Stir raisins, nuts, and coconut into the mixture.

6) Drop cookies on a greased cookie sheet, 2" apart.

7) Bake 10–12 minutes.

Makes 24 cookies
